Calories, Calves and Chicken Casserole

For the month of April, I will be participating in the A to Z blog challenge. This means that every day (except for Sunday) I'll share a blog post that coincides with the day's letter. 

C - Calories, Calves and Chicken Casserole 

I might be the most random person who ever lived. I can jump from one subject to another without a single thought. Hence the reason I thought of three totally different subjects for the letter C. 

Since I began my weight loss journey in 2011, I have constantly questioned if I was eating the correct amount of calories. I've used My Fitness Pal since the beginning, but even with the exercise calories included I didn't think I was getting enough calories.

Note: Trying to lose weight doesn't mean you eat as little calories as possible. Your body needs fuel. Don't starve won't work and it's not healthy.

I found this formula from SkinnyMeg. I have lost weight eating the amount of calories calculated from this formula.

1) 655+ (4.35 x weight in pounds) + (4.7 x height in inches) - (4.7 x age in years) = base calories
2) Take that number and multiply it by 1.2
3) If you want to lose one pound per week, subtract 500. If you want to lose 2 pounds per week, subtract 1000.
4) If you exercise, it's best to eat back half of your workout calories. Your body needs more fuel when you exercise...especially after a hard workout.

I'm seeing some definition in my calves and that makes me happy! All that running is paying off.


When it comes to food, my kid is PICKY. 

Last night, I attempted a new chicken casserole recipe (found here) which resulted in the boy wanting a second helping. It was very good and so easy to make. 

I wanted to share because I know other mommies struggle with picky kids.

Cheap and Easy Chicken Casserole

1 Roll of Ritz Crackers
4 tbsp. butter
1 8 oz. tub of sour cream
1 8 oz. can of Cream of Chicken Soup
4 boneless skinless chicken breasts
1 pack shredded Cheddar Cheese

Preheat oven to 350°F.

In a large pot, boil the chicken until cooked all the way through.

While the chicken is boiling, combine the sour cream and the cream of chicken soup. Mix thoroughly. Put the mixture in the bottom of a small casserole dish.

After the chicken is done, cut into bite-size pieces and place on top of the sour cream/chicken soup mixture. Add shredded cheddar cheese on top of the chicken

Crush the Ritz crackers and cover the dish. Dot the butter over the top of the dish.

Bake in the oven for 25-30 minutes.
